Before and After

It's been awhile since I posted; I could use the wedding as an excuse, but let's face it, I was lazy. I did lose enough weight to fit into my wedding dress, and I had my dream wedding on the beach. Then I declared "No Diet December" and ate all of the things I've been missing for the last three years. Over the course of the last three years I've lost about fifty pounds. In one month, I probably gained back about ten; I haven't had the courage to weigh myself yet.

I'm getting back on the wagon starting... tomorrow... not counting my birthday... and I'm going to reach that goal of 140 pounds this year! Tonight I cooked my protein muffins, baked some spaghetti squash, and have three diced chicken breasts marinating in the fridge. I am ready to go!

Muffin Diet - What to Expect



It's true; it's proven. The only diet that seems to actually work for me, no matter how much I work out or how many calories I attempt to count, is the Muffin diet, followed strictly. I have lost 4 pounds in 2 weeks after a year of eating healthy and working out and not really losing any weight at all.

The Muffin Diet that I follow - originally the Smart for Life diet, but since adapted by me, in part because the Smart for Life cookies are too damn expensive - is essentially a low carbohydrate diet. It is not as severe as the Adkins diet, and I do not actually count carbs, I just avoid high carbohydrate and high calorie foods, and control portion sizes, supplementing at least one of my meals a day (breakfast) with a tasty protein muffin.



As with any low carb diet, the goal is to cause your body to enter a state of ketosis, in which your body stops burning glycogen, the sugar that normally fuels you when you are eating a carb-rich diet, and "starts burning ketones in order to more directly utilize the energy from the fat stores that are being depended upon, and to reserve the glucose only for its absolute needs." Basically you are making your body burn the fat reserves you already have instead of providing new fuel for it to burn as you go about your day.

This kind of diet can be dangerous if you aren't careful. There are unhealthy ways to do it, and when I was on Adkins in high school, I was about as unhealthy as I could be. The trick is not to eat exclusively meat and cheese, which is gross and yet somehow tempting, but to make sure that each meal has two servings of vegetables to accompany your meat. For me the best way to do this diet is to eat what would normally be a healthy meal, and replace the rice or bread or pasta with another vegetable, or just eliminate that serving entirely. That makes the maintenance stage much easier - you aren't really changing your diet, you are just adding that missing element back, and continuing to eat healthy.

Eating out can be hard, but you don't have to stick to salads only. That will just make you sad. You can find dishes at many restaurants that serve Chicken or Fish in some kind of sauce, with potatoes or rice on the side. Ask the waiter if he would mind replacing the rice or pasta or potatoes with seasonal vegetables or, if you are at a Mexican restaurant, double beans instead of beans and rice (black beans if you can). Of course, most chain restaurants also have a low carb menu, so if you're willing to go to Chili's or TGIFridays, you should be set.

At Chilis: Margarita Grilled Chicken, double beans, no rice (or make your own)



At Olive Garden: Grilled Chicken Caesar Salad, substitute Caesar dressing for low fat Italian.



At Gloria's: Pollo Asado, double beans, no rice.



A friend who just started a low carb diet asked me, "Why am I tired all the time?" That's ketosis for you. When I first started the diet again, I was tired and hungry all the time for the first week. Many doctors would recommend that you not work out during this stage - you probably won't have the energy to do it anyway. This is partially due to ketosis, and partially related to your blood sugar, which is all related anyway. You will be tired, hungry, and grumpy. Whenever you feel this way, eat a muffin or a healthy, low calorie snack like carrots or edamame. This too shall pass. For some this lasts up to two weeks. The second weak I was still tired, but more hyper than miserable as my metabolism seemed to adjust. After the second week I was back to normal.

The diet is much easier if you always have some kind of low calorie snack available. The Smart for Life folks recommended 6 muffins a day, which I've never been able to stick to (I usually eat 3-4), but you can easily replace a muffin with a low calorie snack or a high protein diet drink like an Ensure, Boost, or Slim Fast.

Food to avoid: Rice, Bread, Pasta, Crackers, Potatoes, Corn, Beef, Pork

Food to embrace: Chicken, Fish, Carrots, Broccoli, Spinach, etc.

Food to eliminate if it's not working: Legumes (beans)

Cheesecake and pizza taste much better than being thin feels. Don't lie. Don't lie, pin up girl in sparkly underwear. You just have to choose to be healthy instead, and save the cheesecake for special occasions.

Engaged!



Gary asked me to marry him on December 23rd of 2010! I said yes of course. Now we are engaged, and he is my fiance, and I am a bride to be. Both of those words kind of weird me out, but I'll get used to it. My ring is beautiful, and so is... well, I guess Gary is handsome rather than beautiful.



He asked me while we were at his parents' house to celebrate Christmas with them. It's a long story, but suffice it to say that there was a panda in the closet holding my ring. Trust me, it was very romantic.

I brought some muffins to Gary's parents' house, but I didn't really pay too much attention to my diet over Christmas. December 23-26 I had a little diet hiatus. However, I have now found the best motivation ever for losing weight.



That's right, the wedding. I intend to be a size 10 by the time I get married next December, and that requires me to lose about 50 more pounds. I was very motivated to lose weight last year, and this year I just haven't really felt it. I've been eating healthy and counting my calories, but I just didn't feel up to the challenge, and cheated on the diet often enough to make it ineffective. However, through the powers of the mighty ring I have found, like many brides before me, that my motivation has returned. Why, I gave away toast at brunch and didn't eat a single chip today. I was offered a free Lindt chocolate at a bridal boutique, and I said no.

My hope is that I will lose the weight I want to, motivated by my wedding, and will then be able to enter maintenance mode, which I've been pretty good at this last year, and keep it off! One thing that will help is my wedding dress. That's right, I already bought it. I didn't intend to, but I fell in love when I saw it today, and then found out that it was discontinued and thus about 1/3 the usual price. You better believe I bought that sucker! I also bought it a size too small. I'm confident that I will be able to fit in it before my wedding day. In fact, I'm hoping that by the time I get married it will be a few sizes too large, and will thus have to be altered slightly. I would post pictures of the dress, but apparently my fiance would like to be surprised.

So, here I go. I'm off to mix up some muffins, bake some spaghetti squash, and throw some cauliflower in the food processor!

Even Lower Calorie Leftovers



Our favorite neighborhood Chinese Bistro Ming Place has awesome Hunan Chicken. It is so, so delicious. They put broccoli and baby corn and deliciousness in it. I wanted some desperately, so Gary and I ordered takeout. However, I'm no longer eating carbs, so this time I asked them to send mine without rice, and I instead ate it with Cauliflower Rice.



I was pretty sad about this at first, but it was a pretty good substitute. Nothing beats steamed white rice, but it was a close second. Okay, maybe third. But it allowed me to continue to enjoy some of the food I love, and made this diet a little less miserable. Of course, portion control, I still ate only half of it - the servings at Ming are a bit too large - and stuck the rest in the fridge with the remainder of the cauliflower rice for tomorrow.

Chicken Shawarma with Spaghetti Squash


I'm cutting all non-muffin carbs out of my diet. That means no more rice, not even brown rice. I haven't had pasta in a long time, so that's not really a sacrifice, but I will miss the rice.

Tonight I decided to make my chicken shawarma recipe, but I had to find a way to do it without the rice. I decided to go back to an old favorite, spaghetti squash.



I've used spaghetti squash before in previous recipes like Spaghetti Squash Marinara, Spaghetti Squash Stir Fry, and Chicken Curry. I may try the recipe with cauliflower rice at some point.

If you don't know how to prepare spaghetti squash, see one of those other recipes. I actually had some pre-prepared squash sitting in the freezer, so I used that tonight and prepared it very much the same way I cook the brown rice. I put the strands in a pot of boiling hot water mixed with chicken broth and a little bit of curry powder, threw in some lentils, turned it down to medium heat, and let it cook until the water was gone.



After that I followed my original Chicken Shawarma recipe. The end result was actually delicious, which surprised me. I didn't expect a low carb dish to taste so good! The spaghetti squash with lentils also made a pretty good side dish by itself to replace the rice I normally eat with the tomatillo chicken. Yum!

Happy Thanksgiving!

I won't lie to you; I am not going to try to stick strictly to my diet on Thanksgiving. I am, however, going to bring some healthy things myself, and I will try to avoid super unhealthy things (unless I really want to eat them, like stuffing).



My office is going to do a Thanksgiving potluck on Monday, so I am going to make a batch of Chicken Shawarma for that. I am going to be making a lot of Chicken Shawarma this week; that is also one of the items I will be bringing to my family's Thanksgiving celebration on Thursday. I will also be bringing a batch of delicious Tomatillo Sauce and my famous Chicken Popovers. What a lucky family.



I also found a couple of recipes for low calorie stuffing online; I may try one of these out for Christmas this year instead of Thanksgiving, since I've already committed to what I'm bringing. One is a Weight Watchers Recipe with only 2 points per serving, and the other is an Herby Stuffing Recipe with only 82 calories per serving. Not bad; I wonder how they taste.

A Conversation


Belly: I'm hungry.

Ashley: I have a muffin you can eat. I'm on my way home; you can wait until dinner.

Belly: Noooo! I hate muffins, and we have to work out before we eat!

Ashley: You can do it.

Belly: No! Stop at CVS, it's right there. Don't you want some Chex Mix? Maybe a Diet Dr. Pepper?

Ashley: I do, but I'm not going to do that.

Belly: Don't you need shampoo? And maybe... some chex mix?

Ashley: No!

Belly: Um, finger nail polish? Gum? And maybe... chex mix?

Ashley: That can wait.

Belly: Oh! I know! You're out of garbage bags! Ahahaha, now you have to go!

Ashley: Damnit, you're right.

Belly: CHEX MIX!

And so I stopped at CVS. I bought garbage bags, nail polish, some gum, a Diet Dr. Pepper, and... that's it! No Chex Mix!


Belly: Nooooooo! I hate you! Damn you, muffin!

In this story, my belly is a 5 year old, which is pretty much accurate.
