
Ingredients:
1 head of lettuce
1 lb ground turkey
1 stalk of broccoli
1 cup carrot matchsticks
1/2 cup water chestnuts
1 serrano chile, diced
1 tbsp minced garlic
1/2 a red or white onion, diced
1 tbsp rice wine vinegar
1 tbsp lemon juice
1 tbsp curry powder
1 tsp red pepper flakes
1 tsp lemon pepper
1/2 cup low sodium chicken broth
Crisco Calorie Free Olive Oil Spray
Directions:
Spray pan with olive oil and saute onions, chile, and garlic. Stir in 1/2 of the curry powder. Add the ground turkey and cook. Season cooked meat by stirring in lemon juice, red pepper flakes, and vinegar. Add broth.
Steam vegetables and add to the mixture. Season with the remaining curry powder and allow the mixture to simmer. When chicken broth has evaporated the filling is ready to go.
Cut a head of lettuce in half and fill your lettuce wraps!
This mixture was pretty spicy, so if you want something a little more tame you may not want to include the chile. I didn't base this recipe on anything, so I don't have a link to post for you here.
Congrats on the progress thus far! This sounds really yummy, but I'm going to give this a try as a steamed cabbage wrap with out the curry powder and bean sprouts instead of water chestnuts.
