These muffins have 100 calories per serving. This recipe makes 12 cookies.I was on the Smart for Life diet, and have started making my own whey cookies (or muffins) rather than buying theirs. I have already posted a Vanilla Oatmeal Muffin recipe. Today I made Banana Nut Whey Muffins and Chocolate Peanut Butter Oatmeal Whey Muffins. Pictured here are the Chocolate Muffins.
Banana Nut Whey Muffins
Ingredients:
1 banana
1 cup rolled oats
3 tablespoons honey
2-3 tbsp vanilla
1/2 cup soy milk
1/4 cup splenda
1/2 cup egg whites
2 tablespoons peanut butter
3 tablespoons apple sauce
2 tablespoons olive oil or canola oil
1 cup protein powder (vanilla flavored)
1 cup low-sugar muesli (with raisins removed)
Directions:
1. Mix all the ingredients.
2. Use about 2 tablespoons of mixture per muffin
3. Bake for about 15 minutes in 375 degree oven.
Chocolate Peanut Butter Oatmeal Whey Muffins
Ingredients:
1 cup rolled oats
3 tablespoons honey
2-3 tbsp vanilla
1/2 cup soy milk
1/2 cup egg whites
1/4 cup splenda
1 cup peanut butter
2 tablespoons olive oil or canola oil
1 cup protein powder (chocolate flavored)
1 cup low-sugar muesli (with raisins removed)
Directions:
1. Mix all the ingredients.
2. Use about 2 tablespoons of mixture per muffin
3. Bake for about 15 minutes in 375 degree oven.
I recommend that you drink a glass of water (or milk) with these cookies.
