Mashed Cauliflower Casserole


First things first, this recipe serves 3 and has 230 calories and 8 grams of fat per serving.

I didn't believe it at first, but mashed cauliflower actually tastes like mashed potatoes, especially when you flavor and bake it. I'm sure there are similar recipes in existence that use mashed potatoes instead. As far as I'm concerned, the best thing about a casserole is that you can basically throw in everything you like to eat at once. Yum.

Ingredients:

2 Tbsp Fat Free Sour Cream
1 Tsp "I Can't Believe It's Not Butter"
1 Tsp Minced Garlic
1 Cup Carrot Matchsticks
1 Head Broccoli
1 Head Cauliflower
18 oz Chicken, diced
4 Slices Turkey Bacon
1 cup egg white
1/2 cup chicken broth
1/4 Cup Fat Free Mozzarella Cheese
Crisco Calorie Free Olive Oil Spray

Directions:
Preheat the oven to 350 degrees.

Boil or steam broccoli and carrots. Set aside.

Spray pan with olive oil and saute onions. Add diced chicken and cook. Set aside.

Break cauliflower into flourettes and boil until soft. Drain and pour into a mixing bowl along with the chicken broth. Mash. For a smooth, even texture, blend the cauliflower (I did). Mix in minced garlic, sour cream, butter, and egg.

Mix all the remaining ingredients in with the mashed cauliflower and pour into a casserole dish. Sprinkle Cheese on top. Place the dish in the oven and cook for 30-45 minutes.
