Low Calorie Shepherd's Pie

I made this by combining a recipe for conventional shepherd's pie and a smart for life recipe. This recipe should serve 3 and has about 300 calories per serving.

Ingredients:
1 lb ground buffalo
1 head of cauliflower
2 green onions
1 cup of broccoli
1 cup of carrots
1 teaspoon minced garlic
1 teaspoon fat free sour cream
1/4 cup chicken broth
1/4 cup egg white
1/4 cup grated fat free or low fat mozzarella cheese
spray on low calorie olive oil

Directions:
Boil cauliflower, drain, and mash. Mix in minced garlic, sour cream, egg, and chicken broth.

Boil and drain or steam broccoli and carrots.

Spray a frying pan with olive oil and saute onions. Add and brown buffalo meat. After meat is cooked mix in broccoli and carrots.

Pour the meat mixture in a casserole dish. Pour the mashed cauliflower mixture on the meat and spread on top. Top with grated cheese. Set oven to 350 and cook for 30 minutes.

I created this recipe by combining ideas I grabbed from Rachel Ray's "30 Minute Shepherd's Pie" recipe and the Shepherd-Less Pie recipe I found on the Smart for Life website.
