Low-Cal Chicken Low Mein

I found and altered a delicious low calorie chicken chow mein recipe for a dish that's around 250 calories. This should serve 2 people.

Ingredients:
Crisco Fat-Free Spray on Olive Oil
12 oz chicken breast, diced
4 green onions, chopped
1 cup carrot slices or matchsticks
1 stalk broccoli (or one cup of already separated florettes)
2 tsp fresh ginger root, or ginger powder
1 tsp minced garlic
1 package Tofu Shirataki Fettuccine Shaped Noodle Substitute
3 tablespoons low sodium soy sauce
200 ml fat free low sodium chicken broth

Directions:
Heat wok over medium heat. When pan is hot, spray on olive oil and add garlic, onions, and ginger. Add chicken and cook until no longer pink.

Add the chicken broth and soy to the wok with the chicken.

Drain and rinse noodles well and use a knife or kitchen shears to slice them up a bit.

Boil or steam broccoli and carrots. Drain and add to wok. Toss the ingredients to coat noodles evenly with sauce, and enjoy the deliciousness!

(This dish can also be made using 6 ounces of egg noodles rather than the tofu noodles, although obviously that would add a few more carbs and calories.)

Unfortunately I didn't take a picture of my own creation until after I put the leftovers in tupperware, but here is a picture anyway.
